Today's Good Stuff

Happy Feet and I went to town today.  Any day we go to town it's a good day!  We were both glad to get out.  Here's a few things that made my day:



Happy Feets Piggy Tails- She left them in!



A Mocha from McDonalds.  Yummm!



Powdered Donuts and Grapes for lunch!  I know...terrible...but, I usually feed them the "right stuff".
 They LOVED it!


Their faces show the look of waaaaaay too many donuts!



A $5 bouquet of Tulips from Wal-Mart.  I LOVE tulips and these make me so happy!

Chicken Fajita Pizza


This is a recipe from TasteofHome.com.
Ingredients:
1 package (1/4 oz.) active dry yeast
1 cup warm water
2 1/2 cups all-purpose flour
4 T. oil, divided
2 t. salt, divided
1 t. sugar
1 pound bonesless skinless chicken breasts, cut into strips
2 cups sliced onions
2 cups sliced green peppers
2 t. chili powder
1 t. garlic powder
1 cup salsa
2 cups (8oz) shredded cheese (Mozzarella, Monterey Jack, Cheddar)

In a large bowl, dissolve yeast in water.  Add flour, 2 T. oil, 1 t. salt and sugar.  Beat vigorously by hand 20 strokes.  Cover & let rest about 15 minutes.  Knead dough as needed.  Place onto a pizza pan/stone. 


Roll out dough, then prick dough several times with a fork.

Bake at 425 degrees for 6-8 minutes.
In the meantime cut your chicken into thin strips and cook.

When chicken is fully cooked add in the spices.


Slice up some onions & peppers

Next, add the green peppers and onions

Red Shoes decided cooking was hard work and he needed to rest! 


Back to supper...crust is out of the oven.  Not perfect, but it will work!

Spread one cup of salsa onto the baked crust (I know we're kind of messy)


Pile on the fajita mixture and cheese(s). Bake at 425 degrees for 14-18 minutes, or until crust is golden and cheese is melted.

Pictures of Bravery

Red Shoes had to have his tonsils removed in December.  This was his seventh surgery.  Seven surgeries in less than 4 years!  Red Shoes is a brave, brave boy.  When we were driving to the hospital I was talking to him about why we were going to the hospital.  That's always a delicate conversation to have.  I didn't want to tell him too much and scare him, but I wanted him to understand where we were going and why.   When he saw the hospital he said, "found it"!  He didn't seem scared at all. 

We were supposed to have Red Shoes to the hospital at 1:00.  He couldn't eat anything after 7 a.m., or drink anything after 10:00 a.m.  I guess one surgery took longer than expected, and Red Shoes didn't go into surgery until around 4:00.  The picture below is of him playing in the waiting room. I can't think of any other kid I'd rather wait in a waiting room with for 3 hours.  He had to be starving and scared, but he just played and made the best of it. 


The other thing about Red Shoes that always amazes me...whenever it's time for surgery and it's time for him to leave us and go with the nurse, he just gives us a hug and a kiss and goes.  He never cries or anything.  I have, and continue to find that part VERY sad each time. 

The picture below is Red Shoes the next morning after having his tonsils removed.  The night was pretty hard.  Things started looking up when he got to go to the playroom and then have some breakfast.  Red Shoes is a pretty amazing little boy.  He's had lots to overcome, and continues to work hard and demonstrate such bravery.  I love you Red Shoes!

I'm thinking about summer today.  Here's a list of some of the things I miss:


I miss sweeping up the sand that comes into the house after the kids play in the sandbox. 


I miss picnics poolside


I miss picking flowers and produce from my little garden.


I miss being on summer vacation with my family


I miss my green flowerbed



I miss little red faces flushed and sweaty from playing hard at the park


I miss seeing my Chocolate Vines in all their glory




I miss mowing the yard...yes, I really do!

Since this post could be taken as me being negative...

Some good things about winter:
No mosquito bites
Noticing all of the pretty birds at the feeders.  I probably wouldn't notice them during summer
Making & eating soup
Seeing all the birds nest in the Chocolate Vines
Spending cozy evenings with my family

Birthday Books

I've kind of failed in the baby book department.  So many little details to keep up with...I just haven't kept up.  I don't feel too bad about it either.  You've gotta prioritize.  What I've done instead is make a Birthday Book for my kids.  It's a book that captures each one of their birthdays.  On the inside cover page I glue a copy of their handprint so we can see how they've grown.  Then there's two pages for each birthday.  On the first page is a picture of them...usually with their birthday cake.  On that page I also write them a letter.  It's a letter that lets them know how much I love them, things about them, etc.  This page also usually highlights their favorite things or special things about that year.  The second page is usually a collage of pictures from  their birthday party.  I enjoy doing this...and I hope someday my kids will enjoy their special books.
