Chicken Fajita Pizza


This is a recipe from TasteofHome.com.
Ingredients:
1 package (1/4 oz.) active dry yeast
1 cup warm water
2 1/2 cups all-purpose flour
4 T. oil, divided
2 t. salt, divided
1 t. sugar
1 pound bonesless skinless chicken breasts, cut into strips
2 cups sliced onions
2 cups sliced green peppers
2 t. chili powder
1 t. garlic powder
1 cup salsa
2 cups (8oz) shredded cheese (Mozzarella, Monterey Jack, Cheddar)

In a large bowl, dissolve yeast in water.  Add flour, 2 T. oil, 1 t. salt and sugar.  Beat vigorously by hand 20 strokes.  Cover & let rest about 15 minutes.  Knead dough as needed.  Place onto a pizza pan/stone. 


Roll out dough, then prick dough several times with a fork.

Bake at 425 degrees for 6-8 minutes.
In the meantime cut your chicken into thin strips and cook.

When chicken is fully cooked add in the spices.

Red Shoes decided cooking was hard work and he needed to rest! 


Back to supper...crust is out of the oven.  Not perfect, but it will work!

Spread one cup of salsa onto the baked crust (I know we're kind of messy)


Pile on the fajita mixture and cheese(s). Bake at 425 degrees for 14-18 minutes, or until crust is golden and cheese is melted.

Hey Casey
Great pictures of your pizza making. I thought I was looking at Pioneer Womens blog. I love the pict of Quincy in her pig tails. You really let them eat donuts and grapes for dinner and that is it?
