Choose your favorite combination. Suggestions include:
Red, Green and Yellow Peppers
Mushrooms
Frozen Green Beans
Yellow Squash
Zucchini
Onions
Thinly sliced carrots
asparagus
Slice all the veggies into uniform pieces. In a large bowl, coat vegetables with olive oil. Vegetables can be roasted in a 400 degree oven or grilled on a flat grill until tender. Salt and pepper to taste.
