Christi's Peanut Butter Chicken




Before you think, "peanut butter & chicken...together yuck!" I beg you to try this. I haven't found anyone who doesn't like it yet.

1 c. mayo
2 T peanut butter
1 T dijon mustard
1/4 c honey
4-6 chicken breasts
BBQ Chips (I think KC Materpiece are the best)

Mix the mayo, pb, dijon mustard and honey together. Once it's stirred together take some out (about 1/2 to 3/4 cup) and save this for a dipping sauce.
Next, crush about 4-5 cups of bbq chips. Then, roll your chicken through the peanut butter mixture and then through the chips. Place in a 9X13 dish and bake at 350 degrees for 45 minutes.

I like to serve this with rice & a green vegetable.
