Shrapnel Dip

I found this recipe at Mels Kitchen Cafe.  She has an awesome blog filled with fabulous recipes.  Here's just one of them. 


Ingredients:
1 can white beans (I used Great Northern)
1 can black beans
1 can corn
1-2 avocados, diced
1/4-1/2 cup diced red peper
1-2 Roma tomatoes, diced
2 T. finely chopped red onion
2-3 T. finely chopped cilantro
1/3 cup Italian dressing (use more if needed)
Squeeze of fresh lime (about 1/2 tablespoon or so)
Salt & Pepper to taste

Directions: Drain the beans and corn together in a collander. Give them a rinse and let them drain well. Add to large bowl.  Toss in everything else, mix and then pour in the italian dressing.  Squeeze in the lime juice. Gently mix. Add salt and pepper.  Serve immediately with tortilla chips.
